Living Without Magazine was the first allergen-friendly magazine I started to read when I first found out about my food sensitivities. It was always a treat to find a new issue on the magazine rack at Whole Foods–I would gobble up all of the information inside while feeling relieved that there was always a solution to my problem.  It gave me hope that I wasn’t stuck with eating just lettuce for the rest of my life. Now there is something even more special about Living Without’s recent Dec/Jan 2014 issue for all-things holiday related because…

It is my first magazine article written! Friends, I cannot be any more thrilled to share with you these ultra-fun recipes for Christmas. They are so much fun to do with your kids, with a good friend or all by yourself (sometimes I prefer this one because then you don’t have to evenly share your cookies). Regardless of who you decide to make these creative gluten, egg, and dairy-free treats with, the little ones will thank you for giving them the opportunity to still have creativity in their holiday despite their food allergies. Eating can and is still fun regardless of your restrictions!

And I also thank you from the bottom of my heart for all of your support throughout the 2 years of the creation of Fork & Beans that now allows for me to do this as a career. I can’t even believe that I am saying that. I just love you all so much that I will personally go to each and everyone’s homes and pinch the hades out of your cheeks. Just you wait. But until then, I will settle on ONE person’s address. That is, leave a comment below about what your favorite holiday cookie is and if you are chosen, a special gift will be sent to you.     Gingerbread cookies for me. My grandmother always made them and hung them from ribbons on the stair railings. They must have raisins, walnuts and a bit of decorative icing.

    We call them Forgotten Cookies — tiny dried meringues with mini chocolate chips! Since going plant based I haven’t had one but they are still the best!

    My absolute favorite cookie is oatmeal chocolate chip cookies! With the new medical issues going on in my body, we are sticking to gluten and dairy free sugar cookies this year while adding food coloring and sprinkles to make them festive. I am hoping of finding new awesome recipes for other cookies though.

    I love all types of cookies, but since discovering I am gluten intolerant, I tend to stick to easy ones to make with oatmeal. My favorite holiday cookie; however, is a white chocolate cranberry cookie 🙂

    I’m another person who loves the spicy flavors of ginger, cinnamon and cloves. So a gingerbread/ molasses type cookie is my favorite this time of year. Of course, anything chocolate is welcome year round!

    I love wedding cookies. My mom would make them every Christmas. She would make a special batch for me without nuts. The memory makes me smile.

    My favorite USED to be peanut butter cookies with a Hershey kiss or peanut butter cup on top. Yum!!! I need a new favorite this year. What a challenge. Not only am I dealing with a gluten sensitivity, I also need to bake free of peanuts, tree nuts, dairy, eggs, sorghum, millet, amarinth, soy, corn, and high histamine foods (like Sunbutter). Your recipes give me hope that I can still find some tasty treats to bake. Just need time to figure it all out.

    Your flour blend allowed me to successfully “translate” my favorite biscotti recipe to gluten free. – thank you!!

    My all time favorite holiday cooky is an anise biscotti type whose recipe was handed down from a neighbor decades ago. I am newly gluten free (this past April) and need to figure out how to convert this recipe!! Second on the list are oatmeal pecan cookies!! Best wishes on your writing career!

Although not a cookie, I also adore fudge during the holidays, which I have yet to make a vegan version of though I’ve been vegan for years. I’ll have to make some this year.     I would like very much for you to, for reals, pinch my cheeks. 🙂 Ah, well. Anyway – I am a huge fan of almond crescent cookies – my dear Grandpa’s classic recipe. A few years ago, I made a batch and put it in a tin that somehow got put back on the shelf and forgotten. When I pulled it down A YEAR LATER I found it full of Grandpa’s cookies, and they were STILL GOOD!! Madness.

    I love biscochitos, a traditional Mexican cookie that reminds me of my Hispanic heritage. Thankfully my grandmother’s recipe was easily veganized! I can’t wait to make them again this year.

    It’s a toss up. I’m a cookie monster 🙂 I have always loved chocolate crinkle cookies, sugar cookies with frosting/icing and sprinkles, and a good stout oatmeal chocolate chip cookie that I don’t feel bad eating for breakfast (because it has oatmeal, right?!).

    My fave cookie has always been oatmeal ever since my grandma got me hooked on hers (she adds butterscotch morsels). This is also year 2 of my gluten free living and Thanksgiving was easier this year than last–not feeling so deprived. Thanks for all your wonderful GF creations and many more to come.

    oh please put me on the nice list. i brought from germany our tradition of nikolaus to US. it was last friday. and normally we put the shoes (cleaned for sure….and the biggest you can find) in front of the door so nikolaus can fill them. if you were nice you get sweets, were you naughty you get a treebranch (i dont know the correct vocabulary but it is thought for spanks). as i had sweets i can say “put me on the nice list” 😀

    my favorite cookies my mom always made, are normal white sand cookies, always two glued together with a smooth chocolate rum arome cream. i will try them this year the first time to veganize. press thumbs, as i love them 🙂

    I will eat any cookie, any time; well, unless there is gluten or dairy involved. My most favorite cookie has got to be a chewy, crackly ginger molasses cookie. I made an entire batch last year, including chopped up ginger candy and kept the tin in the bedroom. No one else even got a look in. Sometimes I’m just kind of mean that way.
