I am having hauntingly delicious daydreams of these Raw Cake Pops, my most frightful friends. It was a most spooktacular moment, when from out of the food processor, I took a scoop of this dough with my finger to taste it. It was un-BOO-lievable.
How is it possible that this could actually taste like a moist chocolate cake? My eyes bulged out of my skull and I shrieked with sheer excitement. It’s alive! It’s aallllliiiiiiiveeeeeee! (with flavor and texture)
Black Cat Raw Cake Pops Recipe
{Raw Vegan} Gluten, egg, dairy, and refined sugar-free
Makes 8 cake pops
INGREDIENTS:
- 1/2 c. cashews, soaked for 2 hours
- 1/4 c. macadamia nuts, soaked for 2 hours
- 1/4 c. almond or oat flour
- 1/4 c. raw cacao powder
- 2 Tbs walnuts
- 1 date, chopped
- 2 tsp agave or maple syrup
- 1 tsp coconut oil
- dash of vanilla extract
- pinch of salt
- Recipe for raw chocolate
- 8 lollipop sticks
- 16 sunflower seeds
DIRECTIONS:
- Mix the cashews, macadamia nuts, and walnuts in a food processor until crumb-like.
- Add the remainder of ingredients into the processor and pulse until a smooth dough forms.
- Divide dough in half; form 4 balls from each half.
- Gently place a lollipop stick in each dough ball.
- By pinching the dough with your fingers on each ball, create an ear for each side of the cake pop. Chill for 20 minutes.
6. Dip into the raw chocolate. Set with sunflower eyes. Chill again for 20 minutes or until set.
Make these. NOW. And then call me up to invite me over to your house. I miss them already…
