Topped with fresh fruit for the faces, this breakfast treat will make your entire family happy and make YOU happy knowing you are feeding your littles a good-for-you breakfast.
These gluten free vegan Halloween pancakes are easy to throw together too and cook up with a nice fluffy texture, all thanks to Silk’s soy milk. I’m convinced of it. Or maybe it’s Halloween magic? Whatever it is, it’s working for me.
I used my favorite recipe for gluten free vegan pancakes made with Silk’s Organic Soy milk and turned these golden beauties into a holiday feast of Halloween Pancakes. You can always just make a plain ol’ stack of pancakes but why would you do that when you can actually turn them into fun, spooky Halloween characters? Hey, it’s not my life though…
All you need is fresh fruit, seeds, and nuts to recreate these Halloween characters below. Here is what I used for each:
What you’ll need for the Dracula Halloween Pancakes:
- handful blueberries
- 3 banana slices
- 1 almond slice
- 2 sunflower seeds
- 2 pumpkin seeds
- 2 cashews
- 1 strawberry, sliced
What you’ll need for the Crazy Bat Halloween Pancakes:
- Handful blueberries
- 3 banana slices
- 1 almond
- 2 sunflower seeds
- 1 strawberry, sliced
What you’ll need for the Skeleton Halloween Pancakes:
- Handful blueberries
- 2 slices of strawberry
- 1 almond
- 15 sunflower seeds
What you’ll need for the Night Owl Halloween Pancakes:
- 3 slices of banana
- 6 pumpkin seeds
- 2 blueberries
- 1 almond
- 2 slices of strawberry
- gluten free O cereal
Halloween Pancakes
- Prep Time: 5 mins
- Cook Time: 5 mins
- Total Time: 10 mins
- Yield: 4-6 Pancake 1x
Ingredients
Dry ingredients:
- 1 c. + 2 Tbsp. Cara’s gluten free flour mix
- 1 Tbsp. flaxseed meal
- 2 tsp. granulated sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
Wet ingredients:
- 1 c. Silk Organic soy milk(original and unsweetened)
- 1 Tbsp. oil (for oil free, use unsweetened apple sauce)
- 1 tsp. apple cider vinegar
Instructions
- Whisk together the dry ingredients in a large Pyrex measuring cup.
- Add all the wet ingredients and mix until completely smooth.
- Heat up a skillet on medium-high.
- Spoon a couple of tablespoons of the pancake batter into the skillet. Flip over once air bubbles from and the pancake is easy to pick up with a spatula and flip.
