Groundhog Day; an annual tradition that takes place on the second day in February where it is said that the groundhog comes out of hibernation and pops his cute little head out from the ground. Folklore poses that if the cute little critter sees his shadow (meaning it is a sunny day), then it is predicted that winter will continue on for another 6 weeks. If it is cloudy out and no shadow is seen, spring will come early. A strange tradition, yes, but when you have a reason to make Groundhog Day Muffins to celebrate, well, then, I think it’s an occasion to adhere to.
What you’ll need to make these cute Groundhog Day Muffins:
- Batch of your favorite muffins
- Narin’s cookies
- homemade googly eyes
- almond slices
- sunflower seeds
- red hots candies
- 1 Tbsp. melted chocolate
- cacao nibs (optional)
Here’s the tutorial:
Step 1: Melt 1 tablespoon of melted chocolate. You are going use this as the “glue” for the groundhog parts. Have a toothpick handy.
Step 2: Use an oblong allergen-friendly cookie (I used a brand names Narin’s) as the groundhog body.
Step 3: Using the melted chocolate as “glue” place on the bottom of the almond slices.
Step 4: Place each almond slice on the top of the cookie for the ears.
Step 5: “Glue” two homemade googly eyes onto the cookie.
Step 6: Use a red hot candy for the nose.
Step 7: Use two sunflower seeds as the teeth. Allow to set completely. You can speed up this process by placing in the freezer for 5 minutes.
Step 8: Make a batch of your favorite muffins. You can use this one, this one, or if you do not want to make muffins from scratch, you can use an allergen-friendly muffin mix, like Enjoy Life.
Step 9: Insert the completed groundhog into the muffin until to make it stand up straight.
Cover the tops of the muffins with cacao nibs (optional) for the dirt on the ground. Now you have a fun breakfast to serve the kiddos and a new topic of conversation for the morning. Here’s to Punxsutawney NOT seeing his shadow. Come on spring, come to me early, baby!

I am recovering from cancer, and after the initial treatment, was hit with digestive issues so severe that I could not live life. After 8 months of anguish and hoping that things would improve on their own, I am embarking on a gluten, dairy and egg free diet to try to heal my gut.
I have always loved cooking and baking and food, but this new restrictive diet world initially seemed as though it would take all the joy out of all three of those things for me.
