I will admit that gluten free vegan pancakes can be a bit finicky at times. I have this recipe for the Perfect Pancake that gets a range of mixed reviews. Some say they are more like crepes; others say they really are perfect. Sometimes it’s hard to figure out what went wrong with every person’s bad review so wouldn’t it be nice if there was a mix out there that required just the addition of water and oil and made perfect pancakes every single time you wanted them? And what if you wanted to get festive and throw some pumpkin puree in there and get all holly and jolly for the Fall season. Wouldn’t that be great if that very own pancake mix was able to accommodate for that and create easy gluten free pumpkin pancakes?
Wow, it’s as if you knew exactly where this was going, you mind reader you! Wouldn’t you know it that the AWESOME people (and I say awesome because these are some of the coolest people with an allergen-friendly mission) of Enjoy Life has come out with a new line of baking mixes. Did you know this? So far, I’ve tried their pizza crust, all purpose mix, and now their pancake/waffle mix and I’ve yet to be disappointed. This is seriously the allergen friendly’s dream come true (I cannot wait to send my nieces a few boxes of these; they are going to be so jazzed up with jazz fingers and the such). The pancake mix is Sunday-ritual-perfection and does really well with add-ins (as seen here with these Easy Gluten Free Pumpkin Pancakes). No more need to get upset over too runny or too gummy gluten free vegan pancakes. Nope, not in this house…
Now because these pancakes are made with Enjoy Life’s pancake mix, I cannot give substitutions for flours like I would normally do. This recipe is specifically made with this specific flour blend (which is good reason why you need to have it on hand and use it whenever you are in the mood for pancakes). Easy, throw-together, delicious, 3 ingredient pancakes. Okay, so if you make the pumpkin version as seen here you need 2 extra ingredients. I didn’t lose you, did I? 5 ingredients is still okay right? Okay good.
Easy Gluten Free Pumpkin Pancakes
- Prep Time: 2 mins
- Cook Time: 5 mins
- Total Time: 7 mins
- Yield: Makes 8 pancakes 1x
Description
Free of all the Top 8 food allergens, these easy gluten free pumpkin pancakes are a dream come true in taste and in texture.
Ingredients
- 1 c. Enjoy Life Pancake/Waffle Flour Mix
- 1/3 c. pumpkin puree
- 1 1/4 c. nondairy milk
- 1 Tbsp. oil
- 1/4 tsp. pumpkin pie spice
Instructions
- Preheat a nonstick skillet over medium-high heat.
- Combine all the ingredients together until you get a somewhat thick batter.
- Grease the skillet with olive oil spray or a small knob of nondairy butter. Add the batter to form pancake. When it bubbles along the sides (approximately 2 minutes), flip over and cook another 2 minutes or until each side is perfectly browned.
- If you want, you can keep your pancakes warm until all are cooked by placing them in the oven at 200 degrees, covered with foil.
Wait until you see what I did with a mashed banana and Enjoy Life’s pancake mix. You see what I mean? The texture is spot on and they are just…well, they’re just perfect! I think I am going to try to figure out as many flavors as I can with their mix. Yup, that’s gonna happen.

And NO Potato Starch! I’ve thrown out every mix I bought early on because, um nas-ty. Plus they all had potato starch and xanthan gum to add to the yuck factor. So thank you, thank you, thank you whoever was involved ’cause if I have a box of this in my pantry my sweet darling love will cook ’em up for me. After I beg. Just a little. HaHa. first of all, i am blown away that enjoy life has all of these baking mixes that i knew nothing about! secondly, these pancakes look perfect. i went back to your old pancake post and giggled at the random terrible feedback and comments that say “i substituted x with x, x, and x.” haha… some people are very creative…
