This is my first (but definitely not last) time I have worked with candy glass. I’m still trying to figure out an easier way to work with it; some people use hard rock candy, crush it up and bake it into the cookies but I went with the syrup and sugar route. It was a little tricky because the hot sugar liquid firms up quickly so you have to work just as fast but once these Cookie Glass with candy glass came together, I loved them regardless.
I didn’t have a reading glasses cookie cutter so I searched my baking cubby (yup, totally have a cubby…and some) and found this bikini top cookie cutter and thought it would definitely do and that I could adlib. I used the tip to pipe frosting for the inside circles and stacked those cookie bad boys to fit. Don’t worry! I have a video tutorial to help guide you with the creation of these cuties.
Cookie Glasses with Candy Glass
- Prep Time: 1 hour
- Cook Time: 10 mins
- Total Time: 1 hour 10 mins
- Yield: 10 Cookies Glasses 1x
Ingredients
- 1/2 batch Gluten Free Roll Out Cookies
- 1 1/2 c. nondairy chocolate chips, melted (use 1 Tbsp. shortening to smooth out if needed)
For Candy Glass:
- 1/2 c. corn syrup (or brown rice syrup)
- 1/4 c. granulated sugar
Tools:
- Bikini top cookie cutter
- frosting tip
Instructions
For the cookies:
- Follow the instructions for a half batch of the Roll Out cookies here.
- Cut into bikini top shapes (should create approximately 2.5 dozen). Allow to cool completely.
- You will need three cookies per cookie glasses: One cookie needs to be dipped in melted chocolate and fully cooled to set as well as have candy glass in the holes. One other cookie needs to have candy glass in the holes. The other cookie will just be plain. Watch the video tutorial here to get a good idea of the assembly. Be sure to allow the candy glass to harden completely before moving on (approx. 30 minutes) and keep a piece of wax paper underneath just to make sure that it doesn’t fully stick.
- Using melted chocolate as the “glue” to keep the cookies in place. Coated the sides with remainder melted chocolate. Allow to set in freezer.
For Candy Glass:
- Mix the corn syrup and sugar together. Place in microwave for 1 min. 45 sec. until bubbly and thick. Please note that you have to move fast with this part as the sugar liquid firms up quickly. You can try halving this candy glass recipe and doing it in batches.

Have you made my homemade googly eyes yet? If not, these are a MUST to have stocked in y our kitchen? The best part of them (besides the fact that they are allergen friendly and a snap to make) is that they remain good for a long time. You can keep them in your pantry, sealed tightly, for months. Months, I say! Plus, they add such a fun touch to these Cookie Glasses. Sometimes it’s out of necessity to have a treat that stares right back at you.
Remember to always keep a toothpick nearby as it will help with any impurities on the cookie or even in the candy glass. I found that if I wasn’t careful, the cookie that was first dipped in chocolate and then candy glass added, a bit of the chocolate would seep into the clear sugar liquid. The toothpick helps pick that out. I have a secret stash, especially when working with melted chocolate.

Eating meat always made my energy levels decline and milk and eggs did the same but to a lesser degree.
