If you can’t plant a tree then do the next best thing and save the planet with these Plant-a-tree Earth Day Pudding cups. Made with my favorite Chocolate Pudding recipe as a base, this is an easy-to-assemble allergen-friendly snack that you will love making (but not as much as eating).
It’s as easy as this:
Fill in two small cups full of nondairy chocolate pudding. You can follow the recipe here or even watch the video tutorial on how to make it here.
Top the pudding with raw cacao nibs. Now you can also use shredded coconut that has been lightly colored with an all-natural green food coloring. Check out this recipe to see how you color the coconut.
Top the pudding with the homemade pretzel sprout. This video shows how to do it:
And seriously that is it; a fun way to celebrate this upcoming Earth Day!

Ingredients
- 1 recipe Chocolate Pudding (makes two 1/3 cup-ish servings)
- 1/4 c. raw cacao nibs

- 2+ gluten free pretzel sticks
