It’s a celebratory moment to be able to share a recipe based off of FRUIT after months null and void of Mother Nature’s candy! Things are finally settling down in my belly in fact, things are better than ever. Candida was the best thing to ever happen to me. Sounds strange to read that, I am sure, but the truth of it is, it demanded of me to be a better person. I was forced to take an honest look at myself and see where I have contributed to my poor health and to make a plan at bettering ME. It motivated me to expect more and to take responsibility for what I can control. Candida woke my spirit that was sleeping for so long.
Of course, I didn’t need Candida for the good stuff to happen but man, did I use it as the catalyst to make some changes and to take control of my life that expands beyond the dinner plate…and you know what? I’m in this extremely happy frame of mind because of it (and if you have been diagnosed, this can be you as well). I was really motivated knowing that once the diet was over I would have to maintain a close version of it (no processed foods, no refined sugar, limited alcohol, and a diet full of fresh veggies) so it was my duty to start learning how to take better care of myself. That and I didn’t want to ever see my liver levels so low or my health screen coming back saying that I am malnourished.
I’m at a spot now where I don’t crave sweets the way I used to, in fact, these Raw Pear Crumble Stacks are about as sweet as I will go. I rarely eat refined sugar anymore (nor do I want to); I’m just more laser focused on smoothies and fruit and dates (all in moderation, of course, I have to). And yet what a TREAT that I am at this spot finally! It’s been almost 5 months…

Description
These Raw Pear Crumble Stacks are full of fresh and good-for-you ingredients, making it the prefect free from sugar late night treat. Adapted from my No Bake Apple Cobbler.
Ingredients
- 2 Pears, sliced horizontally
For the Crumble:
- 1/2 c. raw almonds
- 1/2 c. walnuts
- 4 Medjool dates, roughly chopped
- 2 Tbsp. coconut oil
- 1/4 tsp. vanilla extract
- pinch of sea salt
Instructions
- Pulse all the ingredients in a food processor until the nuts are roughly chopped and the “crumble” sticks together.
- Place the crumble in between each pear slice.
- Share a stack with a loved one or eat it for yourself!

Next time try using dried figs instead of dates. I’ve read on One Green Planet that dried figs have more healthy benefits than dates and this might help you on your recovery process! =)

These look fabulous. I love the fact they aren’t actually too sweet. I am a huge fan of savory foods but every now and then I need a sweet “pick me up”. This looks like it will do just the trick.
