The ante has completely been upped not only with this unbelievably tasty NO GRAIN, NO YEAST pretzel stick recipe (I can’t even describe how freaking awesome they are; truly a proud moment!)
but with these snowmen made from said recipe. Oh man, I could just melt over them. I had one of those moments where I was yelling at them while photographing them, “CAN YOU BE ANY CUTER?!” They looked blankly back at me as if to say, “No, Cara, we cannot.” Well-played adorable Pretzel Stick Snowmen. Well-played.
I simply cannot accept the fact that just because I might have changed my diet, have food allergies, or cannot eat what I might have that I still wouldn’t have the ability to be creative in the kitchen. That’s what this site is all about anyway, right? When life throws you a terrible digestive tract, turn back and throw snowballs right at it. And then gather up the snowballs and make a snowman from a homemade pretzel stick (did I mention that these pretzel sticks are also grain and yeast free??!!!) Sorry, I am still in disbelief. They are so damn good! Hold on a second: Toot Toot!*
*I had to toot my own horn. HAD to.
Pretzel Stick Snowmen
- Prep Time: 15 mins
- Cook Time: 45 mins
- Total Time: 1 hour
- Yield: Makes 16 Pretzel Stick Snowmen 1x
Ingredients
- Recipe for Homemade Pretzel Sticks, (makes 16)
- 1/2 c. nondairy white chocolate chips or use homemade raw white chocolate (see notes)
- 1 Tbsp. coconut oil
- 1/2 c. shredded coconut, unsweetened
- 1/4 c. nondairy chocolate chips
- shredded carrot, cut into triangles
- Mini Santa Hats for Crafts
- Baker’s twine
Instructions
- Melt the white chocolate until smooth. Dip 3/4 for the pretzel stick into the white chocolate until well-coated. Cover with shredded coconut. Set on a piece of wax paper.
- Using a toothpick, dip into the melted white chocolate and “glue” the mini chocolate chips for the eyes and buttons, as well as shredded carrot triangle. Allow to set.
- Wrap 8″ of baker’s twine around the “neck” of the snowman. Top with Santa hat.
It’s become important to me to not get too over-the-top, especially during the holidays, so I don’t go back to the same bill of health that I was at just a mere two months ago. Though I am not as strict anymore (since I don’t have to be) I am also very aware of how my body has changed and is reacting to certain foods. I still maintain a very healthy, made-from-scratch diet but I still want to have fun with my food and have a treat now and again.
I know many of you are in the same boat so I am super proud not only of this recipe but of what else is to come. Candida can be manageable while still being fun and creative!
Snowman-Building Recipe Notes:
If you don’t want to use nondairy chocolate chips or want to be more mindful of your candida diagnosis, replace with dried blueberries or another dry, dark-colored fruit. Read this article to see why I support the consumption of fruit (dried and fresh) on the Candida diet.
Instead of store-bought nondairy white chocolate use this recipe for a homemade version. Just halve the recipe and you should have 1/2 cup of homemade nondairy white chocolate.
Use a toothpick to “glue” the chocolate chips and carrot nose with melted nondairy white chocolate. Allow to fully set before touching.

I like this suggestion by Makana (this is a trend I’m noticing). I also think there are times when it is equally appropriate to respectfully decline giving any reasons at all, asking him to respect your decision without needing to know why. These instances are probably more rare than not, and it is important that our motivation is as other-oriented as possible. (This is equally true when men are rejecting women.)

Hey lady, sounds like you hit the raw white chocolate jackpot, huh?! And about the soft pretzels…I’m working on it actually 🙂 Now that I have pretzel sticks and mini pretzels under my belt, soft pretzels are a MUST! In fact, you can probably do that with this recipe, just reduce the baking time, xo.

Hey Ashlee, yes there is! In the recipe notes for the pretzel sticks I say that you can use brown sugar or maple syrup 🙂
