Pardon the sappy post (feel free to breeze right through it and skip to the recipe) but this time of year brings out the sap in me. I got to thinking about my siblings this morning and this naturally came about. No, this post has nothing to do with Apple Pie Scones but it is a sentimental homage to my family. A close second to scones…
I am the youngest of three; my brother is eight years older and my sister is two years older than I am. Why yes, due to the closeness of age between my sister and I, we used to fight A LOT, like pretend we were wrestlers while getting ready to go to school and punch the crap out of each other (mainly me kicking her in the crotch because I was smaller and went for the dirty moves just to escape), kind of fighting. My brother was classier than that. He preferred to pin us down and allow the spit to come out of his mouth and then miraculously slurp it back up only to spit again, this time the saliva coming ridiculously close to my face. That or blowing his nose with a paper towel and then coming behind me and wiping it on my face. Classy, yet emotionally-scarring harassment.
We come from an odd family (who doesn’t though right?) My parents have been divorced since I was 11 years old and even my brother does not share the same biological dad as myself. That has never mattered to me though, We are family. He is my brother and I never see it as anything less. I remember how cool my brother was to me as a little girl (he has lost some of it as he has aged though he will deny it) and how I always wanted to hang out with him. All three of us would walk home together from school but my brother would make my sister and I walk hundreds of feet ahead of him. Apparently two snot-faced (literally because of his doing) sisters he had to babysit on a walk took him down a notch in the social caste system known in high school. My sister, though we share the same father, couldn’t have been any different from the other growing up. She was the smart, responsible one, always reading a book, getting good grades, with her very own Babysitter’s Club business. I was too busy carelessly throwing my dresses into my drawers (which drove her mad), forgetting to do my homework (probably because I was too busy watching tv), and never made my bed. Never (which thank god I have changed my ways since).
Now as adults we get the opportunity to get to know each other without force or the potential of smeared snot rags or roundhouse crotch kicks. I appreciate these two human beings more than ever. My brother and I have grown closer over the past couple of years, which truly means more to me than he probably knows. I adore his capacity to imagine and envision new ideas and dream big. He and I share a common love for philosophizing ideas, which we can and do for hours, and I like how I can bounce thoughts off of him about my business and he is always encouraging me to go for it. My sister is one of the most fun souls you could ever encounter. She has a way of making you feel comfortable as if you have known her forever, even if you just met. She works hard in her career, as a wife, and as a mother of three girls who struggle with ranging food allergies, of which she never gives up trying. She is one of those people who has no idea how bright she really shines.
Apple Pie-Stuffed Scones
- Prep Time: 25 mins
- Cook Time: 20 mins
- Total Time: 45 mins
- Yield: 6 Scones 1x
Ingredients
Dry Ingredients:
- 2 c. Cara’s All-Purpose Flour Blend
- 3/4 tsp. xanthan gum
- 1 Tbsp. baking powder
- 1/2 tsp. salt
Wet Ingredients:
- 5 Tbsp. vegan butter, chilled
- 1 c. nondairy milk of choice
For the Filling:
- 1 medium apple, cubed
- 1/4 c. brown sugar
- 1/2 Tbsp. butter
- 1/2 tsp. cinnamon
Sugar glaze:
- 1/2 c. powdered sugar
- 1 tsp. nondairy milk (or enough to create a thicker paste)
Instructions
- Preheat your oven to 400 degrees.
- Whisk together the dry ingredients. Add the vegan butter until nice clumps are incorporated in. Add the nondairy milk until a non-sticky dough is formed. If too sticky add a tablespoon of flour at a time until moist but easy to touch.
- Divide dough into 2 balls. Sprinkle with gluten-free flour so it’s not sticky. Create two 7″ diameter circles with your hands on 2 separate pieces of parchment paper. Place apple pie filling on top of one of the dough circles, leaving an inch of space along the edge. Gently place the other dough circle by using the parchment paper, guiding it on top, and then removing the paper. Pinch the seams to secure the filling in.
- Bake 15-20 minutes until lightly browned along the edges.
- Coat with sugar glaze.
- Makes 6 scones

One of my favorite Christmas Eves of all-time is when my brother, sister and I all crammed into my twin bed, head-to-feet/feet-to-head/head-to-feet. Unable to sleep because, well probably mainly due to the fact that we had no room to be comfortable, but mainly because we were so excited about Christmas morning. It was the best thing ever as the little girl being close to the people I loved and adored the most (and a moment where we weren’t kicking the hades out of each other and where we were actually all getting along). It’s funny how the people you wanted nothing more than to get away from as a kid are the people you want nothing more than to be near to, especially during this time of the year. No matter how much they might drive me nuts as an adult I love these people so much and wish that we could all spend this Christmas together.
