Cauliflower Cream of Wheat

This recipe was originally created 4/11/13 for the GoodVeg site (now no longer in existence) and has since been updated.


Ingredients

Scale
  • 2 c. cauliflower rice
  • 1 1/2 c. dairy free milk
  • 2 small bananas, just ripe
  • 6 Tbsp. unsweetened applesauce
  • 2 Tbsp. brown sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg

Instructions

  1. Throw everything into a high-speed blender until some-what smooth. If you need to add more milk, do so by the tablespoon until right consistency.
  2. Place into a small saucepan and heat up for approx 5 minutes.
  3. Top with fresh fruit and chopped pumpkin seeds (optional).
