The idea of making Homemade Vegan Doritos really originated from this Vegan Nacho Cheese Dorito seasoning recipe (pure genius) from Vegan Richa, which in return inspired me to take it one step further. I had to make them into chips! I know, shocker right? If you know me, you know about my chip obsession. So I browsed the ingredients list of that seasoning and went into my kitchen and made my own version (thank you again, Richa!) Oh and did I mention that I also created two more seasonings?! See below.

The thought of making oven-baked Doritos really got me tickled with Nacho Cheese. I take my Doritos very seriously, friends. I have no clue when the last time I actually ate them however, it’s one of those foods that I have to stay away from for many reasons. One of which is because the moment I taste one it transports me back to junior high and something strange happens within me and I cannot stop eating. My fingers turn into raisins from sucking the delicious, yet abnormally and synthetically orange cheese off of them. May I confess something here? I actually used to eat Doritos for lunch. No, I don’t mean as an accompaniment to my lunch but AS lunch itself. With homemade cookies. Two of them, fresh out of the school’s cafeteria oven. And a can of Coke. God, where was the nutritional training back in 1990?! And my generation wonders why we hit our 30s and all of a sudden these health problems show up randomly…

At least we need no nutritional info with these homemade chips. I love it when I know what is going into my food and I never have to look up the pronunciation of an ingredient. Even more so, I love it when I can make my favorite foods within the comforts of my own kitchen and still feel satisfied.

Homemade Vegan Doritos (3 ways)
- Prep Time: 10 mins
- Cook Time: 15 mins
- Total Time: 25 mins
- Yield: 48 chips 1x
Ingredients
- 6 corn tortillas (make sure that these are on the thinner side–if not they will be crispy along the edges but a little chewier in the middle)
- 1 Tbsp. olive oil
- Seasoning of choice (see above)
Instructions
- Preheat your oven to 350 degrees. Line your baking sheet with a piece of parchment paper.
- Place your tortillas on top of each other. Cut into 8 pie slices.
- In a medium-sized bowl place the “chips” inside and drizzle the olive oil over them until each side and piece is nicely covered.
- Coat each chip with seasoning of choice by sprinkling the seasoning with a spoon over it, making sure that both sides are perfectly coated.
- Place on the baking sheet and bake for 12-15 minutes, rotating your pan at the 7 minute mark. You want the edges to be lightly browned but keep your eye on burning during the last 2 minutes.
- Allow to cool before thoroughly enjoying.

Use the following ingredients per Homemade Vegan Doritos seasoning:
Nacho “Cheese” Seasoning:
- 1/4 c. nutritional yeast
- 2 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. onion powder
- 1/2 – 1 tsp. salt (depending on your salty tooth)
Cool Ranch Seasoning:
- 1/4 c. nutritional yeast
- 2 tsp. onion powder
- 2 tsp. garlic powder
- 2 tsp. dried parsley
- 2 tsp. dried chives
- 1/2 – 1 tsp. salt (depending on your salty tooth)
Spicy Taco Seasoning:
- 1/4 c. nutritional yeast
- 2 tsp. chili powder
- 2 tsp. onion powder
- 1 tsp. smoked paprika
- 1 tsp. garlic powder
- 1/2 – 1 tsp. salt (depending on your salty tooth)
- 1/2 tsp. cumin
- 1/2 tsp. coriander

Okay, these are stupid good. I loooove chips and savory snacks and have been avoiding them due to their lack of any nutritional value but if I can justify getting my B12 in with these, I am set for life. So cheap and easy. I can’t wait to make these for my non-vegan friends next time to show them the magic of veganism. I did it wrong with the first batch and put the seasoning on halfway through and the second batch I put on before putting in the oven and they both turned out excellent. I’m interested in using these flavorings for my homemade Flackers (flax crackers), and I’m wondering if I should put the flavoring in from the start or wait until they are nearly done and then pour the flavoring on. They have to bake for a REALLY long time (4-8 hours but at only 200 degrees, which keeps them “raw”), and a lot of times that means that flavorings sort of float away in the process. Thoughts?
Maybe half way through baking or at the end would be fine too?
Does the nutritional yeast add flavor?

I decided to try the cool ranch flavor as a popcorn topping. I didnt have dried parsley or chives but I was looking at another ranch recipe for popcorn and it called for dill, so I used that. It’s DELICIOUS! Also, I am not a fan of anything overly salty, but my husband is, so I used a full teaspoon of salt, and I thought it was perfect. I also tried the nacho flavor, but it’s not as good as the ranch, IMO. This was my first experience with nutritional yeast and I wish I’d tried it sooner. Thanks for a great recipe.

Hey Cara— Just wanted to let you know that in other recipes for vegan ‘ritos people have recommended lemon or lime juice instead of oil when watching the fat content. I’ve tried it and it takes a prudent hand or they get sour or too wet.

Would love to make these – they sound so yummy! Unfortunately, nutritional yeast contains free glutamic acid, which has the same effect as MSG on many of us who have MSG sensitivity. Garlic and onion powder also contain MSG. Is there anything that could be substituted for the nutritional yeast?

I made these – divided the corn ‘chips’ in half and made Ranch and Nacho Cheese. I used a little over half the seasoning on each batch. Most of the chips are still chewy…only a few came out crunchy …probably means I need to cook longer? (I baked 14-15min). Also even though I divided the recipe in half I should have use ALL of the seasoning to get a good flavor. Definitely going to try again and use an entire batch of seasoning on a 1/2 amount of corn chips. And bake longer
Honestly Patricia, I’m scratching my head over the chewy vs. crunchy. I think maybe increase the heat and make sure the tortillas are on the thinner side. I hope this helps!

I make a taco soup that calls for a packet of Ranch dressing mix, but it has MSG in it, as well as dried buttermilk. Do you think the cool ranch seasoning is a good tasted substitue for the ranch dressing mix?

Doritos in a bag at the store are already gluten free. That said, homemade awesomeness is always better than chemical laden processed to death junk (and yours are prettier too!)

I used to eat them for lunch too! Any resources for GMO free corn tortillas?

Ooooof, the infamous higher altitude baking. That is next on my things to understand completely list. Was there any way that they could have baked longer? If so, maybe increasing the baking time. Also, were your tortillas on the thicker side. I found that when I used those, they became harder like you described. The thin ones crisp up. Hope this helps Patricia!
