I must be on a vegan caramel kick lately (it’s all I have been posting it seems) but I am not even kidding you that this is the best vegan caramel sauce recipe I have yet to taste! The nut butter really mellows out the vegan butter and gives that perfect caramel flavor I have been looking for. It’s the recipe to dip apples in (or other fruit slices–it’s not impartial), to drizzle over brownies, to stick your fingers into…you get the point.

Microwavable Vegan Caramel Sauce
- Cook Time: 7
- Total Time: 10
Ingredients
- 1/3 c. vegan butter
- 1/3 c. light corn syrup
- 2/3 c. vegan sugar (I like Zulka sugar)
- 3 Tb. water
- 1/3 c. creamy peanut butter (or almond works fine)
Instructions
- Combine the first 5 ingredients together in a microwave-safe bowl. Cover with plastic wrap and cook on high for 2 minutes.
- CAREFULLY remove the plastic (please don’t allow the steam to burn your fingers like I did mine) and stir the mixture. Place plastic back on (or use a new piece) and cook another 2 minutes.
- Add peanut butter and cook 45 seconds.
- Remove from the microwave with oven mitts.
- Perfect for dipping with apple slices or for making caramel apples (makes enough to cover 3 medium/large apples).

Did you use the tub of Earth Balance or the sticks? Do you think it would work with Smart Balance light with Flax seed oil? (Its also vegan but is a bit easier to spread and to me has a more “buttery” taste). I have been looking for a good caramel recipe that doesn’t have coconut oil in it! Thanks

You know, there is a possibility of it working–I haven’t tried it so I’m not positive (I also don’t like coconut butter so I don’t have a lot of experience with it in general). Try it and let me know how it works. I would love to hear if it does! You could also try sunflower seed butter if you are allergic to the nut butters 🙂

I made these over the weekend and they were DIVINE~~rolled them in some chopped peanuts and pecans and YUM!! Next time I must remember to make sure my apples are chilled and my sauce a little less warm~~can you tell I was impatient, lol? SO GOOD and just what I have been craving since going to so many state fairs and festivals lately (and as a vegan, not much we can eat at those things!)! Thank you!
