This Valentine’s Day has found me completely struck with love.
First and foremost, the love I feel from you, my dear friends is palpable. I must give the biggest THANK YOU to you for being by my side during one of the darkest times of my life. The encouragement, love and support is so deeply felt through my computer screen, it’s been ridiculous (in a good way).
And then there is the love of my lifeย who has filled myย days with so much love, I just want to burst. I didn’t know I could find something like this but I must have done something right to be given such a perfect gift. Again, luckiest girl in the world. *I’m currently stuffing his face with donuts. Okay let’s be real, I ate them all before he could even have one.*
Valentine Mini Donuts Recipe
Gluten, egg, dairy free
Makes 12 mini donuts
INGREDIENTS:
- 1 1/2 c. gluten-free flour blend
- 1/2 tsp xanthan gum
- 2 tsp baking powder
- 1/2 c. brown sugar
- 1/4 tsp salt
- 1/4 tsp nutmeg
- 1/2 c. non-dairy milk + 1/2 Tb apple cider vinegar
- 1 1/2 tsp Ener-G egg replacer + 2 Tbs warm water, mixed til frothy
- 1/4 c. oil, melted
- 1/2 tsp vanilla extract
DIRECTIONS:
- Preheat oven to 350 degrees.
- Mix dry ingredients together until fully combined.
- Make a well in the center of the bowl. Add all the remainder of wet ingredients and stir with a wooden spoon until just incorporated.
- Grease a mini donut pan.
- Place batter into a ziploc baggie. Cut the corner of one side to use as an opening. This part is important in the shape of the donuts: Using one hand to firmly keep the dough flowing out of the hole, squirt the dough out in a circle in the pan. The more intact the dough comes out, the better the results in the end.
- Bake 8 minutes. Allow to sit in the pan for 3 minutes after you take it out of the oven.
- With your fingers, gently dip the tops of the donuts into icing and immediately sprinkle. You will need to do this one at a time because the icing will set quickly.
Icing Recipe
- 1 1/3 c. powdered sugar
- 1/4 c. melted coconut oil
- 2 Tbs hot water
- 1/2 tsp vanilla extract
- Combine sugar into melted oil.
- Add vanilla and water until thick but thin enough to stir with ease.
- Add more water if too thick or more powdered sugar if too thin.

Where did you get your sprinkles??
I believe I got them at Michael’s, Melissa. They aren’t vegan though. If you are looking for vegan sprinkles, check Whole Foods for better options. Also, I tried to respond to your email about oat flour but it was sent back saying that it was an incorrect address ๐ What I said in the email was that I actually blend my own flours. I buy gf-certified oats and any organic millet and grind them in my blender until they become flour. That way, it’s much cheaper and I don’t have to wait when ordering online ๐ Hope that helps! xo, Cara

Hi Virginia–welcome! So happy that you are here ๐ And yes, go ahead and use an egg for the replacer. Keep in mind that 1 1/2 tsp of the powder + 3 Tbsp of water = 1 egg. Hope that helps! xo

These look adorable. This is my first time on your site and I love the recipes you have. I was wondeirng what brand of sprinkles (particularly the little circles) you use. I’ve tried finding vegan ones and haven’t had much luck.

Hi Barbara! Yes, coconut oil is a solid. Think of butter: when put into colder temps it becomes solid but in warmer temps, it liquifies. Hope this helps!

Can you taste the coconut oil in the icing?
The great thing about coconut oil is that it tastes nothing like coconut ๐ In fact, it is tasteless so you are completely safe with it in your icing! Hope this helps. xo
